No Cook Corn and Basil Soup

I need basil recipes for the summer so I’m adding this so I can make it next season.

Ingredients

  • 3 ears of raw corn, kernels cut off with a knife
  • handful of basil
  • 3 scallions cut into 2″ pieces
  • 1 1/2 of buttermilk OR 3/4 cup greek yogurt 3/4 milk
  • 1 lime juiced
  • 1 garlic clove
  • salt and pepper
  • 1/4 cup of olive oil
  • 1 cup of ice
  • optional serrano or jalapeno

Directions

  • Blend
  • pass through strainer
  • top with olive oil, some pepper
